I grew up eating white potato salad and it is one of my all-time favorite comfort foods. It reminds me of family gatherings, parties, and picnics and it makes me feel happy. I am not a fan of yellow potato salad at all and you will never catch me serving it. Why would I when I can make something as delicious as this classic potato salad instead?
Classic Potato Salad
Ingredients
- 2 lbs. potatoes (not russets) peeled and cut into 3/4-inch chunks
- 1 cup real mayonnaise
- 2 tbsp. white vinegar or pickle juice
- 1 1/2 tsp. salt
- 1 tsp. sugar (optional)
- 1/4 tsp. ground black pepper
- 1 cup thinly sliced celery
- 1/2 cup chopped sweet onion
- 1 tomato, diced
- 2 hard-boiled eggs, chopped
- 2 heaping tablespoons sweet pickle relish
- paprika, for garnish
Directions
- Place potatoes in a 4-5 quart saucepan and cover with water. Bring the water to a boil over medium-high heat. Reduce heat to low and simmer until potatoes are tender (about 10 minutes). Drain and cool slightly.
- Combine the mayo, vinegar, salt, sugar, and pepper in large bowl. Add potatoes, celery, onion, tomato, eggs, and relish and gently mix together. Garnish with paprika. Serve chilled or at room temperature. Refrigerate leftovers.

Yum… Your recipe is very close to mine! Yummy. I love potato salad and I don’t like mustard in mine either, however sometimes I do add crumbled bacon. I am c also going to check out those other recipes to see what else I want to try to make for super bowl or.. ..whenever. Thanks
