Growing up, one of my favorite sandwiches was the tomato sandwich. My mom used to make them with tomatoes and sandwich spread, adding cheese most of the time. As I grew up, my tastes changed and I altered her version a little; I use mayo with dill and never add cheese. This is such a simple sandwich, yet it has big flavor, especially if you use real mayo and ripe high quality tomatoes. I like my tomato sandwich toasted, but the kiddos do not. Try it both ways and see how you like it.
Tomato Sandwich with Dill Mayo
Ingredients (per each sandwich)
- 2 pieces of whole grain bread
- 1 tbs mayo
- 1/2 tsp dried dill weed
- 1 small ripe tomato
Directions
- Mix the mayo and dill together and set aside.
- Slice the tomato to desired thickness.
- Spread mayo on one piece of bread and place the tomato slices on the other piece.
- Assemble and enjoy!

That sandwich looks amazing!! I would have to say some thick sliced baked bacon on that would make it over the top!!! I am to much of a pork lover not to think that way. I haven’t had a tomato sandwich in years!! I will be making one soon because your pics had my mouth watering!
