I love chili but my daughter will never eat it since she claims it’s “way too spicy.” I have tried some pretty mild recipes but none of them have passed muster with her. I have heard of pumpkin chili but have never tried it, so I decided to give it a try in my quest for a chili the whole family could enjoy. I was a little hesitant because, to me, pumpkin and chili just do not go together. Well, guess what? I was wrong!
This recipe was a big hit and both of my kiddos gobbled it up and asked for seconds. I made this pumpkin chili with ingredients I already had on hand. If you have different beans then go ahead and try those out. Also, you can adjust the amount of V-8 juice used to suit your preferred level of thickness in a chili.
This recipe is very mild, slightly sweet, and more healthful than many other chili recipes. Since I do like my chili a little spicy, I added some jalapeño flavored sour cream to mine. Yum.

Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground turkey
- 1 small onion, diced
- 1 clove garlic, minced
- 2 cans diced tomatoes with juice

2 cans chili beans
- 2 cups of V-8 juice
- 2 cups pumpkin puree

1 tablespoon chili powder
- 1 1/2 teaspoons pumpkin pie spice
- dash of salt
Directions
- Heat the oil in a large skillet over medium heat and saute the onion and garlic until tender. Add the turkey and brown evenly. I do this ahead of time and often keep browned turkey in the freezer.
- Combine the turkey and remaining ingredients in a slow cooker and cook on low for 6 hours.
- Serving suggestions: serve with tortilla chips, tortillas, sour cream and shredded cheese.

This chili sounds delicious! I get so caught up in using pumpkin in sweet treats and don’t pay enough attention to using it in savory dishes – which I need to change! We would love this in our house.
