This is the guacamole that made me love guacamole. I spent years abhorring anything with avocados but have recently been converted into an avocado lover. My favorite guacamole recipe is a very delicious copycat of Chipotle’s guacamole. I found this recipe online at www.chipotlefan.com. The recipe below makes about 1 cup or so, depending on the size of the avocados. If you want to make a lot of guacamole you can check out the Chipotle Fan page for a batch recipe. Enjoy this guacamole Chipotle style with some tasty tortilla chips.
Guacamole
Ingredients
- 2 Hass avocados
- 1/2 jalapeño, seeded, and minced
- 1/4 red onion, finely chopped
- 2 heaping tablespoons cilantro, finely chopped
- 1/4 lime, juiced
- 1/4 teaspoon salt (I like sea or kosher)
Directions
- Combine all of the ingredients into a bowl, and mash together until smooth. Add additional lime juice or salt to taste. For extra spicy guacamole, just leave in the jalapeño seeds. Remember to cover the guacamole you store in the refrigerator by placing plastic wrap right on top of the guacamole and then covering the whole dish. This reduces discoloration.
I just made this guacamole today and we gobbled it up. Note to self: double the recipe! I always end up wishing I had more.
