Weeknight Winner: Easy Chicken Parmesan (plus a giveaway)

Easy Chicken ParmesanAs a busy mom, I am always looking for shortcuts in the kitchen, especially when it comes to hectic weeknight dinners. I do not regularly buy frozen cooked chicken products, but when I was contacted to try out Foster Farms frozen products, I looked at my jam-packed calendar and figured I had better give it a try. Between basketball practice, games, scouts, and ballet, we have a few nights a week that keep us on our toes and looking for quick dinner options. I used the Foster Farms Crispy Strips and made a delicious and quick Chicken Parmesan my family enjoyed. It was ready in 20 minutes and it looked (and tasted) like I spent a lot more time on it.

Before we get to the recipe, I have to say that I love the Foster Farms Amazing Chicken commercials. I am a big 80’s fan and I love to see the chickens singing 80’s classics. Check this one out.


Quick dinners do not have to be the same-old-same-old. It is easy to see a bag of frozen chicken strips and think of simply heating and serving them. There is nothing wrong with that at all but sometimes it is nice to serve something both convenient and dressed up. This Chicken Parmesan recipe is amazingly easy and so very delicious.

Easy Chicken Parmesan

Ingredients

  • 1 package Foster Farms Crispy Strips (frozen)
  • 1 – 2 cups marinara sauce
  • sliced mozzarella

Directions

  1. Heat oven to 400 degrees.
  2. Place chicken strips on a baking sheet that has been sprayed with cooking spray.
  3. Bake for 15 minutes.
  4. Remove from oven and carefully spoon marinara sauce onto each chicken strip (as much as desired).
  5. Place a slice of mozzarella on each chicken strip.
  6. Return to oven and place under the broiler for about 1 minute, or until cheese is melted.
  7. Serve with your favorite easy side dish.

  5. When we use to eat meat I would fix chicken breast rolled in honey and brown mustard and roll it in wheat flakes and chopped peanuts. That was our favorite back then. We’re vegetarians now but I imagine your recipe would taste great.

  7. I would probably just eat them with mashed potatoes and country gravy, but I could also see using them in a wrap or incorporated into some other recipe. Your recipe looks really good too.

    We like using frozen popcorn chicken to make homemade KFC mashed potato bowls. We also like chicken patty sandwiches.
