Del Monte

Del Monte is a household name and one that I grew up with. Though I tend to use fresh fruits and vegetables I do buy canned and keep them on hand for conveniences’ sake. I was excited when I was contacted by Del Monte and asked to create a few recipes using their canned products. They asked me to gather some friends and put together some ideas and we came up with several yummy recipes.  I also have the pleasure of hosting a giveaway for a fun Del Monte prize pack for one lucky Celebrating Family reader.

Most of us have served canned vegetables as a side dish and eaten canned fruit right from the can, but I challenge you to think bigger! Remember, canned fruits and vegetables are canned at the peak of ripeness and contain the same essential nutrients as fresh. Also, canned fruit and vegetables are affordable and convenient so why not use them in your main dishes, desserts, and appetizers? Check out these Del Monte canned creations we came up with and read through for the giveaway.

Peach Parfait

If you have a craving for peaches when they are not in season (or affordable) why not try this easy and fun treat? Simply layer drained canned peaches with vanilla yogurt and top with blueberries.

Easy As Shepherd’s Pie

This is an easy spin on shepherd’s pie and is a little different but quite tasty.

Ingredients

  • 1 1/2 pounds russet potatoes
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1 egg yolk
  • 1 tsp salt
  • freshly ground black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 pound ground turkey or beef
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 can beefy mushroom or cream of mushroom soup
  • 1 can Del Monte corn, drained
  • 1 can Del Monte green beans, drained
  • 1 can Del Monte diced tomatoes, drained (optional)

Directions

  1. Preheat oven to 400 degrees. Spray a casserole dish with nonstick spray.
  2. Peel the potatoes and cut into 1/2 inch dice. Boil potatoes in salted water until tender, about 12 minutes. Drain the potatoes and pour them into a bowl, add butter. Combine milk, egg yolk and add the mixture and the salt and pepper to the potatoes and mash until potatoes are almost smooth.
  3. While potatoes are cooking, prepare the pie filling. Heat the olive oil over medium high heat. When oil is heated, add the onions and saute for 3 minutes.  Add the garlic and saute for a few minutes before adding in the ground meat. Stir the meat and cook until it is browned.
  4. Add in the canned soup and the drained canned vegetables one can at a time and stir until combined and heated through.
  5. Add the mixture to the casserole dish and top with the mashed potatoes. Make sure to completely cover the meat filling with the potatoes so it is sealed up.
  6. Bake for 30 minutes or until the top begins to brown. Let it sit and cool for 10 minutes before serving.

Pear and Vanilla Ice Cream

This idea sounded a little strange when it was presented to me but it turned out to be so good!  If you ever find yourself asking what you can do with canned pears (other than fruit salad) try this out.

Open and drain a can of pear halves. Place the pear flat side up and place a scoop of vanilla ice cream on top. Drizzle chocolate syrup over it and serve immediately.

Those recipes are more exciting than simply opening up a can and heating it up right? I hope you try them out and love them. Make them your own and alter them however you are inclined.

    In addition, a nutrition study conducted by the University of Illinois showed that canned fruits and vegetables generally provide as much dietary fiber and essential nutrients as their cooked fresh and frozen counterparts. In fact, canned corn has more lutein than fresh corn. And canned spinach has loads of vitamins A and C.

  26. A quick canned recipe we eat in my family is Mexican chicken casserole. Mix together a can of diced tomatoes with chiles, sweet corn, cream of cheddar cheese soup, cream of chicken soup, and 2 cans of shredded chicken. Cut tortillas cut into fourths And layer tortillas, mixture, and shredded cheddar cheese in a 9×13 pan two or 3 times, then top with a layer of only tortillas then cheese. Bake covered at 350 degrees for 30 minutes (or until hot throughout) and uncover for an additional 5 minutes to brown the cheese slightly. It’s delicious and can feed my family of 5 with leftovers. 🙂

  28. I use canned fruit in jello all the time. It’s great to mix and match the fruits with different flavored jellos. I use canned veggies as side dishes or mixed in with a meal like stews or something similar.

    One thing I love making with canned veggies is busy day chili. our chili is always a rainbow chili to see how many fun colors we can put in.
