I never really ate Rice Krispies treats until I was an adult. These sweet treats were not something that we ate in my home when I was growing up and so I do not make them for my family very often. However, my kiddos love Rice Krispies treats and so we have been experimenting with different recipes and flavor combinations. This cranberry white chocolate combination was a hit so we decided to try another fruit and white chocolate combination, and I think you will agree it is delicious. These Tropical Rice Krispies Treats feel like a vacation to an island locale.
Tropical Rice Krispies Treats

Treats
• 2 Tbsp butter
• 1 10 oz. package mini marshmallows
• 1 tsp vanilla extract
• 6 cups Rice Krispies
• 1/3 cup chopped macadamia nuts
• 1/2 cup white chocolate chips
Glaze
• 1/2 cup mango puree
• 1 Tbsp melted butter
• 1/4 tsp salt
• 1-2 cups powdered sugar
Instructions
- Spray a 9×13 pan with nonstick cooking spray.
- Melt the butter in a large saucepan using low heat. Add the marshmallows, stirring constantly until the marshmallows are melted. Stir in the vanilla extract. Add the rice krispies and mix well. This will be sticky! Spraying the spoon with the non-stick spray will help a little.
- Press the marshmallow mixture into the greased pan, using wax paper to pat into even layer. While still warm, sprinkle the macadamia nuts and white chocolate chips over rice krispies and use wax paper to press the nuts and chocolate into the mixture. Set aside.
- Whisk the mango puree, melted butter, salt, and powdered sugar together. Carefully drizzle the glaze over the rice krispies mixture.
- Cover and let cool for one hour.
