As I get older I am discovering that my tastes continue to change. I actually enjoy spicy flavors now and tend to shy away from mild menu choices. I am also more willing to try new foods and flavors. Recently I decided to try to make chipotle mayo, even though I had never eaten it, because I kept hearing that chipotle mayo adds a zesty zip to burgers, sweet potato fries, fish tacos, veggie burgers, grilled cheese sandwiches, and more. I read a ton of recipes and played around with some ingredients until I found a mix that I liked, at a heat level my family could enjoy. You can personalize this recipe by changing up the ratio of mayo to chilies and adobo sauce.
I used this chipotle mayo on some taco burgers and my family gobbled them up. I am really looking forward to trying it on some fish tacos. Yum.
Chipotle Mayo
Ingredients
- 1/2 cup of your favorite mayonnaise
- 1 chipotle chili (from a can of chipotle peppers in adobo sauce)
- 1 tsp of adobo sauce (from a can of chipotle peppers in adobo sauce)
- salt to taste
Directions
- Combine all ingredients except the salt in a blender.
- Blend until smooth.
- Salt to taste.
This recipe is pretty easy and so much better than the pre-made stuff you will find in the grocery store. Try it out and let me know if you liked it and if you made any improvements to it.
