The Best Grilled Cheese Ever

A grilled cheese sandwich is classic comfort food. I’ve seen a lot of so-called adult variations of this cheesy masterpiece, but to me, nothing tops the classic version. I used to make my grilled cheese like most people do: buttered bread with cheese, grilled to perfection in the frying pan. Until the day I saw a relative doing something I had never seen before. He was spreading mayonnaise on the bread instead of butter. Weird! He dared me to try it, guaranteeing I’d love it and never go back to butter. He was right! A grilled cheese made with mayo is fluffier, tastier, less greasy, and cooks up more evenly. Give it a try with some homemade tomato soup.

Grilled Cheese With Mayo

Ingredients

  • 2 slices of sandwich bread
  • 1 slice medium cheddar or your favorite cheese
  • 1-2 tbsp real mayonnaise

Directions

  1. Heat a nonstick skillet to medium-low heat.
  2. Evenly spread the mayo on both slices of bread.
  3. Carefully place one slice of bread in preheated skillet, mayo side down.
  4. Place the slice of cheese on top of the bread in the skillet.
  5. Place the second slice of bread onto the sandwich, mayo side up.
  6. Grill the sandwich until the bottom piece of bread is golden-brown. Use a spatula to turn sandwich over and cook until the second side is golden-brown and the cheese is melted.
