White Chocolate Buttercream Frosting – Oh So Good

White Chocolate Buttercream Frosting

Every year I make birthday cupcakes for my kiddos’ classes and while my son usually requests themed cupcakes, my daughter usually just wants something pretty. This year she told me she wanted chocolate cupcakes with white frosting. That is pretty standard (boring!) and I wanted to give her something special so I started thinking of all the different flavors of white frosting that I could make. I decided to make a delicious and pretty easy white chocolate buttercream frosting even though I was worried that it might be a little too sophisticated for first graders. Boy was I wrong – those little sweethearts gobbled these cupcakes up and licked every drip of frosting off their tiny fingers.

White Chocolate Buttercream Frosting

Ingredients

  • 1 (4-oz.) white chocolate baking bar
  • 1/4 cup heavy cream
  • 1/2  cup butter, softened
  • 1/2 cup shortening (I use butter flavored Crisco)
  • 6 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1/8 teaspoon salt
  • 2 teaspoons vanilla extract

Directions

Break white chocolate into small pieces and add to microwave safe dish. Add 1/4 cup heavy cream to chocolate and heat in a microwave at 50% power for 1-2 minutes or until melted and smooth. Stir every 30 seconds and be careful not to overheat. Let mixture cool to room temperature (about 30 minutes). Beat together butter and shortening at medium speed until creamy and well blended. Slowly add powdered sugar and remaining heavy cream a little at a time. Beat slowly until well blended. Add salt and melted chocolate and mix until frosting is light and fluffy. Finally, mix in vanilla.

Delicious White Chocolate Buttercream FrostingThis frosting is so good that I gave myself a tummy ache eating it (shame on me!). Who needs cupcakes with frosting this good? Seriously.
