We love eggs in our family. In fact, we love them so much we often eat them for dinner. Well, brinner actually. In case you do not know, brinner is having breakfast for dinner. We do this sometimes and really enjoy eating biscuits and gravy, eggs, and other breakfast items anytime. Who says traditional breakfast food is just for breakfast? Keep reading for an easy crepes recipe and also tips on how to make scrambled eggs.

Eggland's BestI used to be leery of crepes. What the heck were they anyway? Pancake, tortilla, pastry? Crepes were never on the menu in my childhood since my mom is English and she learned how to cook from her Southern mother-in-law. But I kept seeing crepes on breakfast menus and so I looked up some recipes. I was pretty intrigued to see they are made from eggs and flour – two of my favorite ingredients. Now that I know how to make them well, I thought I’d share my recipe with you.

Ingredients

  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 tablespoons butter, melted (plus butter for pan)

Directions

  1. Combine all ingredients in a blender and pulse until smooth. Place batter in the refrigerator for an hour.
  2. Heat a skillet over medium-high heat and brush with melted butter. Pour 1/4 cup of crepe batter into pan, tilting to completely coat the surface of the pan.
  3. Cook the crepe until the bottom is light brown, for about 2-3 minutes. Loosen with a rubber spatula, gently turn over and cook the other side. Serve hot with your choice of filling and toppings. Strawberries with chocolate sauce is great!

My favorite egg dish is pretty simple – basic scrambled eggs. But I am picky because so many people just do not know how to make this fluffy dish. Undercooked or overcooked eggs are just a waste and watery eggs are just as bad. Here are a few tips to help you master this classic dish.

  • My mom might disown me for this, but do not add liquid to your eggs! Adding water or milk is not necessary for fluffy eggs and, in fact, may lead to watery or flat eggs.
  • Using a whisk or egg-beater, beat the heck out of your eggs! You must get a lot of air into the eggs if you want them to be fluffy. So don’t be shy, get to beating!
  • Add the eggs to a preheated skillet right after whisking.
  • Cook the eggs over medium heat. I find my eggs cook best when I give them time.
  • Use a cast iron or non-stick skillet. Eggs that stick to the bottom of the pan are not exactly tasty.
  • Add the salt after the eggs are in the pan, not before whisking. Salt added too early can break down the egg and make it watery.
  • Do not overcook. Remember that the heat in the eggs will continue to cook them after you remove them from heat. Pull the eggs off the burner when they are almost completely done.
